We have a turtle that lives around the place wear I work and I thought it would be fun to post these pictures. His name is Oswald and he didn't seem the least upset to be picked up and admired for a few minutes before we placed him back outside.

Thanksgiving Dinner: Coconut Flour Cake

I don't normally venture into new recipe territories and baking is a less traveled road for me. But, I had decided to try this no sugar cake made with coconut flour.

My mistake was that I forgot to put parchment paper at the bottom of the cake pans. The twist is that I added fresh squeezed lemon juice to the cake and the cream cheese frosty. The cake only had a slight lemon flavor but the frosting was quite tart. To counter act the tartness- I added walnuts and then cut the cake into squares.

Did I love it? YES! It was fabulous for me, but it didn't go over so well with the rest of the group. Oh Well! Back to cooking!

Our Thanksgiving Dinner: Pumpkin Pave

Hubby found this no sugar recipe as an alternative to pumpkin pie. I must tell you that this dessert was delicious! It was so light and full of flavor! We served this with whipped cream.

Thanksgiving

Hubby and I plan on celebrating our Thanksgiving dinner at home before heading off for a visit with family. Hubby wanted to ensure we kept true to our healthier way of living even on the more festive day.

Our Dinner Menu

Turkey
Mashed Cauliflower
Sauteed green beens with onions
Salad with walnuts and goat cheese with homemade dressing

Pumpkin muffins made with coconut flour and honey for sweetener as well as a lemon cake with the same base


I plan to take pictures whether I succeed or fail.

The beauty loves the sun, but the weather has been too harsh with heat to take outside.
